The highest number of cattle stock farms in the province of Mantua are concentrated south of the Po towards the territory of Modena, in the countryside around Goito and in the large area situated between the village of Curtatone and the Po embankment.
Beef is a tradional food, with an inimitable taste. When it has just been cut, this meat has a typical dark red colour. This is due to the fact that a pigment contained in the muscle oxygenates with the passing of time and becomes bright red. The intensity of the colour is determined by the age of the animal. Fat is an indispensable part, since it gives taste and tenderness to the meat during cooking; the higher the fat content, , the lower the loss of constituting water.
The Consorzio Carne Bovina Documentata (Certified Beef Consortium), established in 1982, adhers to a Production Regulation which forbids the use of any hormonal substances which are damaging to man’s health, as well as the use of animal feed not allowed by current norms. Besides, the Consorzio is the holder of a Marchio di Qualità (Quality Mark) which guarantees that correct production procedures have been followed.
For some 20 years, the Consorzio has applied a process of traceability of the meat, under which it administers a certification of its own, which describes each step of the process of production, from the animal entering the affiliated farm to the moment the meat reaches the authorised retailed outlet.
A document accompanies the meat up to the moment of purchase. This Etichetta d’Origine-Informazione per il consumatore (Origin and Information label for the consumer) contains a complete description of the animal or the animals which form the batch : the name of the sales outlet, lot number, expiry date, the abbatoir and the town or farm where the live animal was fattened, together with its ear-label numbers, country of birth, sex and date of entry to the farm.
