The province of Mantua, together with the provinces of Verona, Brescia and Trento is grower of the Olio Extra Vergine d'Oliva Garda Orientale PDO.
This is the oil produced at the most northern latitude in the world, and the microclimate of the lake Garda protects the plant from the aggression of the parasites of olives, which, in order to be reproduced, need far higher temperatures.
Oil was produced in the Garda area as early as the early Middle Ages: in those times it was considered a precious good, and it was used as a payment for rents.
The quality of this oil is particularly valuable, since the growers still pick the olives by hand directly from the plants and practise the cold grinding of olives using the millstone as in ancient times.
According to the production rule of PDO the olives must be picked not over the 15th of January, and must be carried to the oil-press by 5 days after the harvesting, in order to avoid damaging fermentations. Furthermore, the product is periodically checked by a committee charged with /collecting samples from the producing farms and with analyzing them.
The most representative varieties are: "Bresciano", "Casaliva", "Frantoio" and "Leccino". Garda PDO Oil has a colour which verges from golden-green to intense yellow, because it is high in chlorophyl. Its smell is delicately fruity, its flavour is lightly fruity of variable intensity.
It is considered one of the best Italian olive oils. It is regarded as the best seasoning if used cold, but it is also very suitable for cooking, because it is resistant to high temperatures.
