The province of Mantua boasts the production of two DOP cheeses: Grana Padano and Parmigiano-Reggiano. A third DOP cheese is produced in very reduced amounts: Provolone Valpadana.
A lot of secondary products can also be found in dairy farms. The most common is "ricotta": the name ("twice cooked") indicates that this product is obtained from the whey left after cheese processing. The features of "ricotta" vary depending on the type of whey or, in other words, on the type of cheese produced. There is cow's and sheep's ricotta: the former is the most popular in the province of Mantua.
Another secondary dairy product is "tosello", consisting of gummy strips cut from whole Grana cheese wheels during production. Once these cheese "rejects" were collected and eaten in farm families either fresh or softened on polenta toasts.
