The consumption of pork in the Mantuan territory dates back to the Etruscans, as some findings South of Mantua show. This habit continued through the centuries till the Renaissance, when Isabella d'Este Gonzaga, marchesa of Mantua, had different kinds of salami served on her table every day.
The pork-butcher was already a itinerant figure very much in demand, regarded as a "master" of that particular job. Pork-butchering and pigs are symbols of wealth and well-being in this region, with the salami as the most famous representative. A unique product we are proud of.
